Grilled Caesar Chicken Sandwich Recipe
Easy patio or deck entertaining. Martinate the chicken early in the day, throw it on the grill, and assemble at the table. Add some cucumbers in sour cream and you have an easy meal.

Ingredients
  • 3 boneless chicken, breast halves
  • 2 1/2 Tablespoons olive oil
  • 3 tablespoons fresh lemon juice
  • 1 1/2 teaspoons Herbes de Provence
  • 1 clove garlic, pressed
  • 1 loaf French bread, or a good crusty focaccia
  • Romaine lettuce
  • red onion, sliced
  • fresh summer tomatoes, sliced
  • Caesar salad dressing, Cardini's - to taste

Directions
  1. Pound chicken breasts between sheets of plastic wrap to 3/4" thickness. Combine oil, juice herbes and garlic in resealable plastic bag. Add chicken to bag & marinate 2-6 hours.
  2. Grill chicken, cool, and cut into slices.
  3. Cut bread horizontally in half. Pull out and discard soft interior crumbs from top half leaving a 1/2" thick shell. drizzle dressing over inside of top and bottom. Layer onion, tomato, lettuce and then chicken. Top with top half of bread and weight down the sandwich.
  4. Cut into quarters to serve.
