Pineapple upsidedown farina cake

- 3 1/2 water shopping list
- 1 cinnamon stick shopping list
- 2 Whole star anise shopping list
- 1/2 t salt shopping list
- 2/3 c farina (cream of wheat, not the instant kind) shopping list
- 1/4 c sugar shopping list
- 2/3 c cream cheese shopping list
- 2 T butter shopping list
- 1 C diced pineapple shopping list
- 1 C brown sugar shopping list
- 1/2 C butter shopping list
How to make it
- Bring water to boil with cinn. stick and star anise
- Boil for 1min. let steep for 5 min.
- Strain water and use for the cooking liquid
- Add salt and bring to boil
- Once boiling add farina slowly stiring the whole time
- Lower heat to simmer for 5 min.
- Fold in cream cheese, sugar, and butter
- Set aside as you prepare pineapple syrup
- For syrup:
- In a saute pan add butter and brown sugar cook for about 2-3 min.
- Add pineapple and cook for an additional minute
- Once ready Spray Muffin tins or souffle dishes with pan spray
- Ladle syrup and pineapple into tins about 1/4 of the way full
- Using spoons spoon farina onto top of pineapple syrup to the top
- Bake in a 350 oven for 15 min
- Let sit for about ten minutes then flip them over onto plate, garnish with any extra syrup you have left over
