Pineapple Upsidedown Farina Cake Recipe

Ingredients
  • 3 1/2 Water
  • 1 Cinnamon stick
  • 2 Whole Star Anise
  • 1/2 t salt
  • 2/3 c farina (cream of wheat, not the instant kind)
  • 1/4 c sugar
  • 2/3 c Cream cheese
  • 2 T Butter
  • 1 C diced pineapple
  • 1 C brown sugar
  • 1/2 C Butter

Directions
  1. Bring water to boil with cinn. stick and star anise
  2. Boil for 1min. let steep for 5 min.
  3. Strain water and use for the cooking liquid
  4. Add salt and bring to boil
  5. Once boiling add farina slowly stiring the whole time
  6. Lower heat to simmer for 5 min.
  7. Fold in cream cheese, sugar, and butter
  8. Set aside as you prepare pineapple syrup
  9. For syrup:
  10. In a saute pan add butter and brown sugar cook for about 2-3 min.
  11. Add pineapple and cook for an additional minute
  12. Once ready Spray Muffin tins or souffle dishes with pan spray
  13. Ladle syrup and pineapple into tins about 1/4 of the way full
  14. Using spoons spoon farina onto top of pineapple syrup to the top
  15. Bake in a 350 oven for 15 min
  16. Let sit for about ten minutes then flip them over onto plate, garnish with any extra syrup you have left over
