How to make it

  • Preheat oven to 350.
  • Grease your muffin tins.
  • Mix together dry ingredients and set aside.
  • In mixer bowl, add egg, oil, and sugar and blend together.
  • Gradually mix in dry ingredients.
  • Stir in carrots and walnuts.
  • Bake for 20 minutes or until a toothpick comes out clean if you stick it in the middle of one of the muffines.
  • Serve hot or cooled as desired.

    Wouldn't make these again. Made them exactly as recipe stated but left out nuts for the kids. They tasted strongly of baking soda. My kids didn't like them, so I will look for another carrot muffin recipe.
