My Red Beans

- 1-lb dried beans that have been soaked overnight in water shopping list
- 2-tbspn salt shopping list
- 2-cloves pressed garlic shopping list
- 1-large onion, chopped shopping list
- 1-tspn hot sauce shopping list
- 1-bay leaf shopping list
- Dash of worcestershire sauce shopping list
- 1-lb hot smoked sausage, sliced in coins shopping list
- cooked rice shopping list
How to make it
- Rinse the beans and place in the crockpot.
- Add the remaining ingredients-
- Cover with water so that when you put your hand into the crock pot and mash down on the beans there is about 1/4-in clearance under water.
- Cook on high for one hour.
- Cook on low for 5 hours.
- Remove lid and mash the beans with a potato masher until the liquid thickens.
- Cook for one more hour-
- Serve over hot rice-
- (Note: Sides of fried chicken, greens and cornbread complete the "perfect" Southern meal.)
