My Red Beans Recipe
If you're from the South you know tht there are as many ways to cook red beans as there are to fry chicken. Here's how we like to make ours.

Ingredients
  • 1-lb dried beans that have been soaked overnight in water
  • 2-tbspn salt
  • 2-cloves pressed garlic
  • 1-large onion, chopped
  • 1-tspn hot sauce
  • 1-bay leaf
  • Dash of Worcestershire Sauce
  • 1-lb hot smoked sausage, sliced in coins
  • Cooked rice

Directions
  1. Rinse the beans and place in the crockpot.
  2. Add the remaining ingredients-
  3. Cover with water so that when you put your hand into the crock pot and mash down on the beans there is about 1/4-in clearance under water.
  4. Cook on high for one hour.
  5. Cook on low for 5 hours.
  6. Remove lid and mash the beans with a potato masher until the liquid thickens.
  7. Cook for one more hour-
  8. Serve over hot rice-
  9. (Note: Sides of fried chicken, greens and cornbread complete the "perfect" Southern meal.)
