Ingredients
  • 1 16-oz bag of rotini/spiral pasta
  • 1 ready-cooked whole rotisserie chicken
  • 1 .5 oz package dry pesto sauce mix (Knorr brand)
  • 3/4 cup water*
  • 1/4 cup extra virgin olive oil*

Directions
  1. Shred the cooked rotisserie chicken into bite-size pieces. Set aside.
  2. Heat water in large pot to cook pasta. Throw in rotini. Cook until al dente.
  3. Heat 3/4 c water, 1/4 c olive oil and dry pesto mix in small pot until boiling. Reduce heat on small pot and let simmer for until pasta is done.
  4. Drain pasta and return to large pot.
  5. Add pesto sauce and shredded chicken to large pot.
  6. Toss until well mixed and serve (or put into containers and refrigerate to enjoy later!)
  7. * ingredients needed for Knorr brand dry pesto sauce mix, if you use a different brand, these ingredients may vary.
