Rhubarb Custard Pie

- 2 eggs shopping list
- 1 cup sugar shopping list
- 2 Tbs. flour shopping list
- 1/2 tsp salt shopping list
- 2 Tbs butter melted shopping list
- 1 cup milk or half and half shopping list
- 2 cups chopped rhubarb shopping list
- 1 9-inch pie pastry shopping list
How to make it
- Beat eggs and combine with sugar, flour and butter.
- Beat well and add milk or cream
- Place rhubarb into pie shell.
- Pour over milk mixture.
- Bake 350F 45 to 50 minutes or custard is set and rhubarb tender
- Do not overcook.
- Cool completely.
- Chill well before cutting
- Serve with ice cream or whipped cream
