Rhubarb Custard Pie Recipe
One of the first rhubarb recipes I ever made. Very basic and yet wonderful rhubarb pie

Ingredients
  • 2 eggs
  • 1 cup sugar
  • 2 Tbs. flour
  • 1/2 tsp salt
  • 2 Tbs butter melted
  • 1 cup milk or half and half
  • 2 cups chopped rhubarb
  • 1 9-inch pie pastry

Directions
  1. Beat eggs and combine with sugar, flour and butter.
  2. Beat well and add milk or cream
  3. Place rhubarb into pie shell.
  4. Pour over milk mixture.
  5. Bake 350F 45 to 50 minutes or custard is set and rhubarb tender
  6. Do not overcook.
  7. Cool completely.
  8. Chill well before cutting
  9. Serve with ice cream or whipped cream

Rhubarb is wonderful. I should grow it too, but I don't. It's grandmother food. Yes!
