Fish Balls Recipe
The generic asian staple, fish balls are kinda like meatballs, but with a much lighter and in many ways more pleasant feeling.

Ingredients
  • 2 lb. freshwater fish, includes bone and skin
  • 8 oz. roasted almonds
  • 4 oz ham -optional
  • 1 egg
  • 2 Tbsp cornflour
  • 1 tsp salt
  • Oil

Directions
  1. Bone and skin the fish.
  2. Mince the meat and cut the almonds and ham into small pieces
  3. Put the minced fish in a deep bowl, add the egg, flour and salt.
  4. Mix thoroughly.
  5. Add the ham and almonds.
  6. Shape into small balls.
  7. Cook briefly in boiling salted water.
  8. They are ready as soon as they float to the surface.
  9. Serve very hot lightly sprinkled with good sesame/extra-virgin olive oil
