Snow White Cheesecake

- Crust: shopping list
- 1 1/2 cups graham cracker or digestive biscuit crumbs shopping list
- 6 T butter, melted shopping list
- 1/4 cup granulated sugar shopping list
- 1 pound cream cheese shopping list
- 1 tsp vanilla extract shopping list
- 1 cup granulated sugar shopping list
- 2 cups sour cream shopping list
- 4 egg whites shopping list
- 1 tsp confectioners' sugar shopping list
How to make it
- Preheat the oven to 350 degrees.
- Place the crumbs in a bowl and add the butter and sugar.
- Blend well.
- Press the crumb mixture onto the bottom and partly up the sides of a greased springform pan.
- Make sure the mixture is smooth along the bottom.
- Bake for 10 minutes.
- Cool before filling.
- Preheat the oven to 350 degrees.
- In a large mixing bowl, beat together the cream cheese, vanilla and sugar.
- Add the sour cream slowly to the mixture.
- Beat the egg whites until they form soft peaks.
- Then add the confectioners' sugar and continue beating until they form stiff peaks.
- Fold the egg whites into the cream cheese mixture.
- Pour the mixture into the prepared crust and bake for 1 hour.
- Allow to cool in the oven with the door propped open.
- Transfer to counter to let it adjust to room temperature.
- Chill.
