How to make it

  • Cook couscous in 1 1/2 cups water and let cool.
  • On a small platter layer mixed greens, couscous, corn, pimento, olives, green onions, salmon and eggs. Whisk together lemon juice, oil, water, cumin, salt and pepper to taste and pour over salad. Sprinkle with chopped parsley. Let guests serve themselves.
