How to make it

  • In a large skillet over medium heat, cook bacon until evenly brown
  • Chop bacon, and set aside, reserving the bacon fat
  • Put onion in skillet, and saute until tender
  • Stir in rice, and cook until lightly browned, 3 to 5 minutes
  • Meanwhile...
  • In a small saucepan over medium heat, combine chicken broth and tomato sauce and bring to a boil
  • Then pour in boiling chicken broth and tomato sauce into skillet
  • Add the diced tomatoes, green peppers, and chopped bacon stir well to combine
  • Season with chili powder, salt, and pepper
  • Cover, and simmer for 30 to 40 minutes
  • Stir in corn and heat 15 minutes longer
  • Serve!

    ohhh bacon in spanish rice I love it, ok I love bacon with anything but this is something I will try out for sure

    I have been searching and searching for a Spanish rice that isn't just tomatoes and peppers - your recipe sounds like exactly what I'm trying to duplicate...thank you for posting it - I will try it next time we have tacos or fajitas.
