Spanish Rice

- 1 cup chicken broth shopping list
- 1 cup tomato sauce shopping list
- 1/2 cup onions, diced shopping list
- 6 slices bacon shopping list
- 2 tomatoes, diced shopping list
- 1 green pepper, diced shopping list
- 1 cup uncooked white rice shopping list
- 1 teaspoon chili powder shopping list
- 1/2 teaspoon salt shopping list
- 1/2 teaspoon pepper shopping list
- 1 (10 ounce) can whole kernel shopping list
- corn, drained (optional) shopping list
How to make it
- In a large skillet over medium heat, cook bacon until evenly brown
- Chop bacon, and set aside, reserving the bacon fat
- Put onion in skillet, and saute until tender
- Stir in rice, and cook until lightly browned, 3 to 5 minutes
- Meanwhile...
- In a small saucepan over medium heat, combine chicken broth and tomato sauce and bring to a boil
- Then pour in boiling chicken broth and tomato sauce into skillet
- Add the diced tomatoes, green peppers, and chopped bacon stir well to combine
- Season with chili powder, salt, and pepper
- Cover, and simmer for 30 to 40 minutes
- Stir in corn and heat 15 minutes longer
- Serve!
