Tex Mex Squash n Zuchini Casserole

- 2 small yellow squash, sliced shopping list
- 2 small zucchini, sliced shopping list
- 1 medium onion, sliced shopping list
- 1 teaspoon garlic, minced shopping list
- 2 tablespoons oil shopping list
- 4 ounces green chilies, chopped shopping list
- 2 cups Yellow corn shopping list
- 1/2 cup Cheddar, grated shopping list
- 1/2 cup Monterey jack, grated shopping list
- 1 teaspoon cumin shopping list
- ***1 ripe red tomato, chopped shopping list
How to make it
- Lightly saute the squash, zucchini, onion, and garlic until
- just soft.
- Toss with the remaining ingredients.
- Place in a lightly oiled 2-quart casserole dish.
- Bake at 400 for 20 minutes.
- Top with chopped tomato before serving if desired
- Serve warm with grilled chicken or pork.
