Tex Mex Squash N Zuchini Casserole Recipe
This is from my friend Carrie! Great when the summer veggies are in! I throw some chopped tomato on top!

Ingredients
  • 2 small Yellow squash, sliced
  • 2 small Zucchini, sliced
  • 1 medium Onion, sliced
  • 1 teaspoon Garlic, minced
  • 2 tablespoons Oil
  • 4 ounces Green chilies, chopped
  • 2 cups Yellow corn
  • 1/2 cup Cheddar, grated
  • 1/2 cup Monterey jack, grated
  • 1 teaspoon Cumin
  • ***1 ripe red tomato, chopped

Directions
  1. Lightly saute the squash, zucchini, onion, and garlic until
  2. just soft.
  3. Toss with the remaining ingredients.
  4. Place in a lightly oiled 2-quart casserole dish.
  5. Bake at 400 for 20 minutes.
  6. Top with chopped tomato before serving if desired
  7. Serve warm with grilled chicken or pork.
