Easy And Delicious Bluberry Muffins Recipe

Recipe easily doubles and muffins freeze well. One of my favorite recipes. I sometimes add a bit of vanilla flavor to the recipe. Muffins are very moist and tender.

Ingredients
  • 1 large egg
  • 1/2 cup milk
  • 1/4 cup oil
  • 1 1/2 cups flour
  • 1/2 cup sugar
  • 2 tsp baking powder
  • 1/2 tsp salt
  • 1 cup bluberries.

Directions
  1. I sometimes bake my muffins in heart shaped tins.
  2. Be sure to grease tins well to insure easy removal of the muffins
  3. Beat egg in bowl with fork and stir in milk and oil.
  4. Combine all dry ingredients in another bowl and mix well.
  5. Stir dry ingredients quickly into the liquids to moisten.
  6. Batter will be lumpy!.
  7. Fill muffins tins 2/3 full.
  8. Bake 400 degrees 20 minutes or golden.
  9. Makes about 10 -12 regular size muffins.
