Minestrone Soup

- 3 tbsp olive oil shopping list
- 1 cup onions, minced shopping list
- 1/2 cup zucchini, chopped shopping list
- 1/2 cup frozen green beans shopping list
- 1/4 cup celery, diced shopping list
- 4 tsp garlic shopping list
- 4 cups vegetable broth shopping list
- 2 cans red kidney beans shopping list
- 2 cans white beans shopping list
- 1 can diced tomatoes shopping list
- 1/2 cup carrots, julienned shopping list
- 2 tbsp fresh parsley shopping list
- 1 1/2 tsp dried oregano shopping list
- 1 1/2 tsp salt shopping list
- 1/2 tsp black pepper shopping list
- 1/2 tsp dried basil shopping list
- 1/4 tsp dried thyme shopping list
- 3 cup hot water shopping list
- 4 cups baby spinach shopping list
- 1/2 cup pasta shells (small) shopping list
- 1 can tomato Paste (6 oz) shopping list
How to make it
- Heat olive oil over medium heat in a large soup pot.
- Saute onion, celery, garlic, green beans and zucchini in the oil for 5 minutes or until onions are translucent.
- Add vegetable broth, drained tomatoes, beans, carrots, tomato paste, hot water and spices.
- Bring soup to a boil then reduce heat and allow to simmer for 20 minutes.
- Add spinach leaves and pasta and cook for an additional 20 minutes or until desired consistency.
