Chicken a la Leslie

- You can change this up to suit your own needs but this is EXACTLY what I used: shopping list
- 3 large boneless, skinless chicken breasts shopping list
- 1/2 bottle of Stubbs (original) barbecue sauce shopping list
- 1/2 red onion (sliced, not chopped) shopping list
- 1 small bucket of sliced mushrooms shopping list
- 6 slices thick sliced bacon shopping list
- 3 slices 3-cheese blend cheese shopping list
- 3 slices swiss cheese shopping list
- 3 slices pepper jack cheese shopping list
How to make it
- Heavily season chicken breasts with fajita seasoning. Bake at 400 for 1 hour (or until done). While chicken is cooking, fry up 6 slices of bacon (2 per chicken piece). Nice and crispy. Set aside.
- Pour off most of the bacon fat, but leave enough to fry up the onion slices and mushrooms.
- Saute the mushrooms and onion slices until they are fairly soft, but not totally limp.
- When chicken is done, liberally pour barbeque sauce over the chicken. Place two slices of bacon over each piece of chicken. Cover the bacon with the entire batch of onions and mushrooms. Cover each piece of chicken with a piece of swiss, a piece of 3-cheese blend cheese, and a piece of pepper jack.
- Put back in oven until cheese is melted.
- Eat until you make yourself sick!
