How to make it

  • Peel squash, slice, cook in salted water until tender
  • Drain squash, place in casserole dish
  • Top with 6 tablespoons of butter, onion, the grated cheese, Ro-Tel, pepper
  • Stir all the ingredients lightly
  • In bowl, stir the melted butter with the crushed Ritz cracker crumbs
  • Sprinkle the buttered crumbs over the squash
  • Bake at 350 degrees for 30 minutes or until bubbly
