Very Simple Mexican Squash Casserole Recipe
Very simple combination of cooked squash, onion, butter, Ro-Tel tomatoes/chilies, cheese, topped with buttered Ritz cracker crumbs, then baked. Especially great with grilled pork loin.

Ingredients
  • 5-8 yellow squash
  • 4 tablespoons minced onion
  • 6 tablespoons unsalted butter
  • 1-1/2 cups Cheddar cheese, grated
  • 1/2-1 can Ro-Tel tomatoes and green chilies
  • Salt and pepper to taste
  • 1/2 stick unsalted butter, melted
  • 1 roll Ritz crackers coarsely crushed
  • May sprinkle with a little cayenne and a pinch of sugar

Directions
  1. Peel squash, slice, cook in salted water until tender
  2. Drain squash, place in casserole dish
  3. Top with 6 tablespoons of butter, onion, the grated cheese, Ro-Tel, pepper
  4. Stir all the ingredients lightly
  5. In bowl, stir the melted butter with the crushed Ritz cracker crumbs
  6. Sprinkle the buttered crumbs over the squash
  7. Bake at 350 degrees for 30 minutes or until bubbly
