Very Simple Mexican Squash Casserole

- 5-8 yellow squash shopping list
- 4 tablespoons minced onion shopping list
- 6 tablespoons unsalted butter shopping list
- 1-1/2 cups cheddar cheese, grated shopping list
- 1/2-1 can Ro-Tel tomatoes and green chilies shopping list
- salt and pepper to taste shopping list
- 1/2 stick unsalted butter, melted shopping list
- 1 roll Ritz crackers coarsely crushed shopping list
- May sprinkle with a little cayenne and a pinch of sugar shopping list
How to make it
- Peel squash, slice, cook in salted water until tender
- Drain squash, place in casserole dish
- Top with 6 tablespoons of butter, onion, the grated cheese, Ro-Tel, pepper
- Stir all the ingredients lightly
- In bowl, stir the melted butter with the crushed Ritz cracker crumbs
- Sprinkle the buttered crumbs over the squash
- Bake at 350 degrees for 30 minutes or until bubbly
