How to make it

  • Line two loaf pans with tin foil and heat oven to 275 F.
  • In a large mixing bowl mash the bananas with the sugar and then mix with the salt and soda. Blend in the eggs, then, in order, the oil, flour and buttermilk.
  • Pour batter into loaf pans and bake for about 2 1/2 hours or until a tooth pick inserted comes out clean.

    Contrary to rumor it's not actually the colour of the banana that makes any loaf of banana bread dark, in fact, you can use only moderately ripe bananas and still have a dark loaf, if you extend the baking time and lower the temp. Bananas contain gasses that release when exposed to warmth, hence why a banana left in a lunch bag on a school bus will go black by the time your child's field trip is over! I always bake my loaves at this temp, 275 degrees and the amount of time here, 2.5 hours, is exactly right. Try this with non-ripe bananas and see, the same colour will occur, however you may not have that rich flavour that comes from an aged banana, where the gasses have had a chance to establish in advance. :)
