Ingredients
  • 1 tb red wine vinegar
  • 4 tb extra virgin olive oil
  • 1 garlic clove, minced
  • 1 tb flag hill cranberry liqueur
  • Salt and pepper
  • 2 handfuls mesclun greens
  • 2 tangerines, peeled and separated into sections
  • 1/8 red onion, sliced thin
  • 12 pistachio nuts, shelled
  • 4 oz smoked steelhead trout, flaked
  • 2 lemon wedges

Directions
  1. In a small bowl whisk together the vinegar, olive oil, garlic and liqueur. Season with salt and pepper to taste.
  2. On two plates evenly arrange the mesclun, tangerines, sliced onion and pistachio nuts in a visually pleasing way. Scatter equal amounts of the trout on top of the greens. Spoon on modest amounts of the dressing. Garnish with lemon wedges.

I love trout and I am loving this recipe with the cranberry liqueur in it! I have not tried that.
