How to make it

  • Combine mozzarella, Parmesan, ricotta or cottage cheese, egg, salt, pepper, and oregano.
  • Make smooth paste and chill for 30 minutes to an hour.
  • For batter combine egg, flour, milk, and oil. Beat until smooth.
  • Peel eggplants and cut lengthwise into thin slices.
  • Heat oil and butter to 360 degrees.
  • Dip eggplants slices into flour, then in batter, and then in oil until browned on both sides.
  • Drain on paper towels.
  • Place 2 tablespoons of chilled filling mixture on each slice and roll loosely, placing seam-side down in buttered 9X13 dish.
  • Cover with tomato sauce.
  • Bake at 375 degrees for 15 minutes.
  • Serve over pasta noodles.
