Ingredients
  • Filling:
  • 2 cups grated mozzarella cheese
  • 1 cup grated parmesan cheese
  • 2/3 cup ricotta cheese or cottage cheese
  • 1 tsp salt
  • 1/2 tsp pepper
  • 1 tsp oregano
  • Batter:
  • 1 egg
  • 2 Tbsp flour
  • 2/3 cup milk
  • 2 Tbsp cooking oil
  • Other:
  • 2 small eggplants
  • 1/4 cup cooking oil
  • 2 Tbsp butter
  • Flour
  • 12 oz tomato sauce

Directions
  1. Combine mozzarella, Parmesan, ricotta or cottage cheese, egg, salt, pepper, and oregano.
  2. Make smooth paste and chill for 30 minutes to an hour.
  3. For batter combine egg, flour, milk, and oil. Beat until smooth.
  4. Peel eggplants and cut lengthwise into thin slices.
  5. Heat oil and butter to 360 degrees.
  6. Dip eggplants slices into flour, then in batter, and then in oil until browned on both sides.
  7. Drain on paper towels.
  8. Place 2 tablespoons of chilled filling mixture on each slice and roll loosely, placing seam-side down in buttered 9X13 dish.
  9. Cover with tomato sauce.
  10. Bake at 375 degrees for 15 minutes.
  11. Serve over pasta noodles.
