Eggplant Italiano

- Filling: shopping list
- 2 cups grated mozzarella cheese shopping list
- 1 cup grated parmesan cheese shopping list
- 2/3 cup ricotta cheese or cottage cheese shopping list
- 1 tsp salt shopping list
- 1/2 tsp pepper shopping list
- 1 tsp oregano shopping list
- Batter: shopping list
- 1 egg shopping list
- 2 Tbsp flour shopping list
- 2/3 cup milk shopping list
- 2 Tbsp cooking oil shopping list
- Other: shopping list
- 2 small eggplants shopping list
- 1/4 cup cooking oil shopping list
- 2 Tbsp butter shopping list
- flour shopping list
- 12 oz tomato sauce shopping list
How to make it
- Combine mozzarella, Parmesan, ricotta or cottage cheese, egg, salt, pepper, and oregano.
- Make smooth paste and chill for 30 minutes to an hour.
- For batter combine egg, flour, milk, and oil. Beat until smooth.
- Peel eggplants and cut lengthwise into thin slices.
- Heat oil and butter to 360 degrees.
- Dip eggplants slices into flour, then in batter, and then in oil until browned on both sides.
- Drain on paper towels.
- Place 2 tablespoons of chilled filling mixture on each slice and roll loosely, placing seam-side down in buttered 9X13 dish.
- Cover with tomato sauce.
- Bake at 375 degrees for 15 minutes.
- Serve over pasta noodles.
