Corn Salad

- 2 pks (10 oz each) frozen corn, thawed shopping list
- 2 cups diced green or yellow pepper shopping list
- 2 cups diced sweet red pepper shopping list
- 2 cups diced celery shopping list
- 1 cup minced fresh parsley, preferrably Italian shopping list
- 1cup chopped green onions shopping list
- 1/2 cup shredded parmesan cheese, or asiago cheese shopping list
- 2 tsp ground cumin shopping list
- 1 1/2 tsp salt shopping list
- 3/4 tsp freshly ground pepper shopping list
- 4 drops Tabasco sauce or 1/2 tsp pepper sauce shopping list
- 1/8 tsp cayenne pepper or to taste shopping list
- 3 tbsp olive oil shopping list
- 2-3 garlic cloves, minced shopping list
- 6 tbsp fresh lemon juice shopping list
- 6 drops worcestershire sauce shopping list
How to make it
- In large bowl, combine the first 12 ingredients. In a glass measuring cup, combine oil and garlic. Microwave, uncovered on high for 1 minute. Cool. Whisk in lemon juice. Pour over corn mixture and toss to coat. Add Worcestershire sauce and mix. Cover and refrigerate until serving.
- Best served the same day.
