Corn Salad Recipe
Goes very well with BBQ. Went over very well at a large family gathering. Ingredients available year round.

Ingredients
  • 2 pks (10 oz each) frozen corn, thawed
  • 2 cups diced green or yellow pepper
  • 2 cups diced sweet red pepper
  • 2 cups diced celery
  • 1 cup minced fresh parsley, preferrably Italian
  • 1cup chopped green onions
  • 1/2 cup shredded Parmesan cheese, or Asiago cheese
  • 2 tsp ground cumin
  • 1 1/2 tsp salt
  • 3/4 tsp freshly ground pepper
  • 4 drops Tabasco sauce or 1/2 tsp pepper sauce
  • 1/8 tsp cayenne pepper or to taste
  • 3 tbsp olive oil
  • 2-3 garlic cloves, minced
  • 6 tbsp fresh lemon juice
  • 6 drops Worcestershire Sauce

Directions
  1. In large bowl, combine the first 12 ingredients. In a glass measuring cup, combine oil and garlic. Microwave, uncovered on high for 1 minute. Cool. Whisk in lemon juice. Pour over corn mixture and toss to coat. Add Worcestershire sauce and mix. Cover and refrigerate until serving.
  2. Best served the same day.
  3. Enjoy!
