How to make it

  • 5lb rib Beef
  • 3 tbspn Olive Oil
  • 3 Garlic Cloves, crushed
  • 4 oz. Fresh white Breadcrumbs
  • 3 tbspn chopped Fesh Parsley
  • 1 tsp Salt
  • 1/2 tsp black Pepper
  • Sprigs of Parsley to Garnish
  • Heat oven Gas 4
  • Wipe meat, place on roasting rack
  • Heat oil in frying pan
  • Add Garlic and saute for 2 minutes, stirring
  • Mix in breadcrumbs, parsley, salt and black pepper
  • Press mixture onto Meat, coating well
  • Insert meat Thermometer into thickest part of meat
  • Roast until meat thermometer registers 20 minutes per lb. for Rare
  • 22 mins per lb for Medium
  • 24 mins per lb. for Well Done
  • When working out the correct Roasting time add 20 mins at the end.
  • When cooked, remove from oven
  • Cover with foil and allow to stand 15 /20 mins before carving
  • Garnish with sprigs of Parsley
