Ingredients

2lb of Skirt Steak (Note of the Healthy: Ask your butcher to trim the fat is possible)

2 Tbsp of Chili Powder

1 Tbsp of Cumin

1 Tbsp of Paprika

1 Tbsp of Cracked Peppercorns

1 Tbsp of Lime Zest (You might want to reserve the juice)

2oz Cilantro

(Optional) Lime Juice

(Optional) Chopped Scallions

Directions

In a medium size bowl add all the spices together including the zest and cilantro.

On a Medium size marinating sheet season your Skirt Steak on both sides while rubbing the spices

Let it sit for 20 minutes and 5 minutes before its almost done *getting to know the flavors* preheat the grill to hot.

Once 20 minutes have passed throw the meat on the grill and cook for at least 5 minutes on each side.

When it is done place it on a plate and add Lime Juice if you want a fresh taste and Scallions for color and presentation.

Served with Mexican Rice and a Good Chipotle sauce.
