South of The Border Steak

- 2lb of skirt steak (Note of the Healthy: Ask your butcher to trim the fat is possible) shopping list
- 2 Tbsp of chili powder shopping list
- 1 Tbsp of cumin shopping list
- 1 Tbsp of paprika shopping list
- 1 Tbsp of Cracked peppercorns shopping list
- 1 Tbsp of lime zest (You might want to reserve the juice) shopping list
- 2oz cilantro shopping list
- (Optional) lime juice shopping list
- (Optional) Chopped scallions shopping list
How to make it
- In a medium size bowl add all the spices together including the zest and cilantro.
- On a Medium size marinating sheet season your Skirt Steak on both sides while rubbing the spices
- Let it sit for 20 minutes and 5 minutes before its almost done *getting to know the flavors* preheat the grill to hot.
- Once 20 minutes have passed throw the meat on the grill and cook for at least 5 minutes on each side.
- When it is done place it on a plate and add Lime Juice if you want a fresh taste and Scallions for color and presentation.
- Served with Mexican Rice and a Good Chipotle sauce.
