Ingredients

1 lb ground beef, brown in pan

1 medium to small onion, brown with hamburger

garlic to taste

1 large can hominy (I use one of white and one of yellow hominy)

1 large can of diced tomatoe

4 oz can chopped or diced green chiles

1 medium can Ranch-style beans, or light red kidney beans

1 can whole kernel corn

Directions

Add all ingredients, simmer slowly in pot on low heat for one hour. Serve over tortilla chips or with corn bread (or crackers)..

Can be cooked in crock pot all day on low. Recipe can be doubled or tripled.

Okay, just checked it out and it is quite different from plain old cornmeal. Hominy is the kernel left over from the corn being soaked in lye or lime, and cornmeal is just dried whole corn ground coarsely. What an education! I also found a grocer that specializes in Mexican and Latino foods and he's just around the corner! Can't wait to try it!
