Ingredients
  • ½ pound cooked lobster meat
  • 3 cups waffle mix
  • 1/2 cup Lemon Butter - recipe below
  • Chop lobster meat. Prepare waffle mix as directed. Add lobster meat.
  • Bake in a hot waffle iron until brown. Serve with lemon butter.

Directions
  1. Lemon Butter:
  2. ½ cup butter or margarine
  3. 1 teaspoon lemon juice
  4. ¼ teaspoon grated lemon rind
  5. Whip butter. Slowly add lemon juice and rind.
