Corn Pepper and Mushroom Casserole

- 1/4 cup chopped green pepper shopping list
- 1/4 cup chopped celery shopping list
- 1/4 cup chopped onion shopping list
- 3 tablespoon bacon drippings shopping list
- 15 ounce can whole kernel corn drained shopping list
- 1/4 cup pimiento chopped shopping list
- 1/2 cup chopped mushrooms shopping list
- 2 tablespoons cornstarch shopping list
- 1/3 cup water shopping list
- 1 pound cooked shrimp peeled shopping list
- salt and black pepper to taste shopping list
- 1/2 cup sharp cheddar cheese grated shopping list
How to make it
- Sauté pepper, celery and onion in bacon drippings then add corn, pimiento and mushrooms.
- Mix cornstarch and water until smooth then add to mixture in pan.
- Stir constantly over medium heat to thicken then add cooked shrimp, salt and pepper to taste.
- Pour into a greased casserole dish then sprinkle cheese on top.
- Bake at 400 for 30 minutes.
