Ingredients
  • 1 C shortbread cookie crumbs (about 5 oz)
  • 3 Tbl butter, melted
  • 1 C purchased lemon curd
  • 1 C frozen whipped topping, thawed
  • 1 pint (2 cups) fresh blueberries
  • 1 tsp powdered sugar

Directions
  1. In a small bowl, combine cookie crumbs and melted butter; mix well
  2. In each of 4 parfait glasses or dessert dishes. layer about 2 Tbl of the cookie crumbs, 2 Tbl of the lemon curd , 2 Tbls of the whipped topping and 1/4 cup of blueberries
  3. Repeat layers
  4. Refrigerate until serving time
  5. Just before serving, sprinklwe parfaits iwth powdered sugar
  6. Store refrigerated and covered
