Blueberry Lemon Shortbread Parfait

A recipe , with photo from Pillsbury 2001. Very cool, light tasting and easy. A great flavor combination!
Ingredients
- 1 C shortbread cookie crumbs (about 5 oz) shopping list
- 3 Tbl butter, melted shopping list
- 1 C purchased lemon curd shopping list
- 1 C frozen whipped topping, thawed shopping list
- 1 pint (2 cups) fresh blueberries shopping list
- 1 tsp powdered sugar shopping list
How to make it
- In a small bowl, combine cookie crumbs and melted butter; mix well
- In each of 4 parfait glasses or dessert dishes. layer about 2 Tbl of the cookie crumbs, 2 Tbl of the lemon curd , 2 Tbls of the whipped topping and 1/4 cup of blueberries
- Repeat layers
- Refrigerate until serving time
- Just before serving, sprinklwe parfaits iwth powdered sugar
- Store refrigerated and covered

Yummy, favored flavors here...lemon and blueberry are a match made in Heaven! Love lemon or lime curd. Wonderfully easy dessert.
