I have been making this recipe each year as soon as peaches are available for the past 14 years. It originates from my friend Molly Ann.

Ingredients
  • 9 fresh peaches (organic is best, make sure they are not mealy, but juicy and ripe)
  • If the peaches are unripe, let them sit for a day or two in a brown paper bag.
  • 1 stick of butter
  • 1 cup flour (1/2 cup each cake and regular is best)
  • 1 1/2 t. baking powder
  • 1 pinch of baking soda
  • 1 cup milk
  • 1 cup sugar divided 3/4 and 1/4

Directions
  1. Preheat oven to 350
  2. Pour boiling water over peaches, let sit 30 seconds, drain, slip off skins
  3. Slice peaches into a 9 x 13 pan, add 1/4 sup sugar and stir well.
  4. Melt butter in a small pan
  5. In a separate bowl mix together flour, baking powder, remaining sugar, salt and baking soda.
  6. Add milk and butter to flour mixture, stir well till combined and uniform
  7. Pour over peaches.
  8. Bake for about 30 to 40 minutes till golden brown.
  9. Serve with vanilla ice cream.
  10. A variation is to add about 1 cup of blueberries or 1 cup sliced strawberries to the peaches
