Apricot Coconut Salad

- 1 can(17 oz.)apricot halves shopping list
- 1 package(3oz.) apricot Jell-O or peach Jell-O shopping list
- 1 cup boiling water shopping list
- 1 package(8oz) cream cheese shopping list
- 1 1/2 cups(about) angel flake coconut shopping list
- salad mold / container shopping list
How to make it
- Drain apricots, reserving 3/4 cup syrup.
- Chop the apricots.
- Dissolve jell-o in boiling water
- Add measured syrup and chill until slightly thickened.
- Blend cream cheese and small amount of gelatin in blender until smooth.
- Gradually add remaining jell-o, blending well.
- Chill until slightly thickened.
- Fold in coconut and apricots.
- Pour into a 4-cup mold or individual molds
- Chill until firm. about 3 hours.
- Unmold
- Makes 4 cups or 8 servings
