How to make it

  • Drain apricots, reserving 3/4 cup syrup.
  • Chop the apricots.
  • Dissolve jell-o in boiling water
  • Add measured syrup and chill until slightly thickened.
  • Blend cream cheese and small amount of gelatin in blender until smooth.
  • Gradually add remaining jell-o, blending well.
  • Chill until slightly thickened.
  • Fold in coconut and apricots.
  • Pour into a 4-cup mold or individual molds
  • Chill until firm. about 3 hours.
  • Unmold
  • Makes 4 cups or 8 servings
