These come out crispy and tasty. Make sure you drain on Bounty paper towel so no excess oil remains. To serve with rice and beans see my recipe for stewed black beans...there is a photo of the whole dish

Ingredients
  • 1 package of thin cut pork chops (2 lbs brings about 8 chops)
  • Adobo Goya
  • 1/2 packet of Sazon w/ achiote
  • 2 tbs lime juice
  • 1 tbs red wine vinegar
  • 4 garlic cloves minced or smashed in a Pilon (wooden mortar)
  • 1/2 tsp ground pepper
  • Corn oil for frying

Directions
  1. Rinse the pork chops with cold water and drain
  2. lightly season pork chops with Adobo Goya making sure both sides are seasoned (do not use to much)
  3. season pork chops in bowl with the Sazon. (You may use a little more Sazon depending on how thick the pork chops are)
  4. coat pork chops with lime juice and red wine vinegar
  5. Add garlic and pepper
  6. (Wash hands well with soap and water for next step)
  7. Rub in the seasoning with your hands making sure each pork chop is seasoned evenly with garlic and spices
  8. Refrigerate atleast 30 minutes to marinade meat. You may also leave overnight.
  9. Heat about 1cm of corn oil in pan
  10. Fry pork chops in single layer until each side is dark brown and garlic is toasted
  11. Remove from pan carefully and lay pork chops on plate lined with folded paper towels to drain out oil (press with paper towel to remove excess oil)
  12. Serve with white rice and beans
