Oil - Free Scallop Ceviche

- 1 1/2 tsp ground cumin shopping list
- 2 tsp lime zest shopping list
- 1 1/4 cup fresh lime juice shopping list
- 1/4 cup orange juice shopping list
- 2 lb bay scallops shopping list
- 2 jalapeno peppers, finely chopped shopping list
- 1/4 cup red onion, finely chopped shopping list
- 3 plum tomatoes, seeded and chopped shopping list
- 1 red bell pepper, seeded and chopped shopping list
- 3 green onions, chopped shopping list
- 1/3 cup chopped fresh cilantro shopping list
How to make it
- Stir the cumin and zest into the lime and orange juices and pour over the scallops.
- Stir in the chopped jalapeno and red onion.
- Cover and refrigerate for at least 2 hours.
- Just before serving, drain the scallops and mix with the chopped tomatoes, bell pepper, green onions and cilantro.
