Mrs Reddys Curry Recipe
This is a family recipe used by the wife of a bloke my husband works with, and originally used mutton but I did chicken as I had a freezer full of it. It would probably work with any meat, just vary the cooking times accordingly.

Ingredients
  • 2 chicken breasts, chopped into bite size pieces
  • 2 onions, chopped
  • 1tbsp ginger and garlic paste
  • 1/2tsp hot chilli powder, or to taste
  • 1/2tsp turmeric
  • salt to taste
  • 2tsp ground coriander
  • 1/3 cup dessicated coconut
  • 1/4tsp garam masala
  • 3 large tomatoes, peeled and blended (don't be tempted to use tinned, they're too strongly flavoured)
  • 2 twigs of curry leaves
  • handful of chopped coriander leaves
  • tbsp oil

Directions
  1. Heat oil in large frying pan and fry onions until golden brown
  2. remove from heat and add ginger and garlic paste, stir.
  3. Add turmeric and chilli, mix well.
  4. Add meat with the curry leaves and cook until meat browns, stirring occasionally
  5. Add tomato and 1/2 cup of water if necessary, depending on how juicy the tomatoes are, stir well and add remaining dried spices and coconut. Cook for 20 - 25 minutes. Add salt to taste.
  6. Garnish with chopped coriander, serve with rice or Indian flat bread.
