- 2 chicken breasts, chopped into bite size pieces shopping list
- 2 onions, chopped shopping list
- 1tbsp ginger and garlic paste shopping list
- 1/2tsp hot chilli powder, or to taste shopping list
- 1/2tsp turmeric shopping list
- salt to taste shopping list
- 2tsp ground coriander shopping list
- 1/3 cup dessicated coconut shopping list
- 1/4tsp garam masala shopping list
- 3 large tomatoes, peeled and blended (don't be tempted to use tinned, they're too strongly flavoured) shopping list
- 2 twigs of curry leaves shopping list
- handful of chopped coriander leaves shopping list
- tbsp oil shopping list
How to make it
- Heat oil in large frying pan and fry onions until golden brown
- remove from heat and add ginger and garlic paste, stir.
- Add turmeric and chilli, mix well.
- Add meat with the curry leaves and cook until meat browns, stirring occasionally
- Add tomato and 1/2 cup of water if necessary, depending on how juicy the tomatoes are, stir well and add remaining dried spices and coconut. Cook for 20 - 25 minutes. Add salt to taste.
- Garnish with chopped coriander, serve with rice or Indian flat bread.
