Ingredients
  • 1 pkg yellow cake mix
  • 1 pkg instant lemon pudding mix- 4 srv size
  • 1 can fruit cocktail in heavy syrup - 16 oz
  • 1 cup flaked coconut
  • 4 eggs
  • 1/4 cup oil
  • 1/2 cup brown sugar
  • 1/2 cup chopped nuts
  • Glaze:
  • 1/2 cup butter
  • 1/2 cup sugar
  • 1 1/3 cups coconut
  • 1/2 cup evaporated milk

Directions
  1. Blend all cake ingredients except for brown sugar and nuts and beat 4 minutes with electric mixer at med. speed.
  2. Pour into a well greased 9 x 13 pan.
  3. Sprinkle with the brown sugar and nuts.
  4. Bake in a 325F oven about 45 minutes or tested done.
  5. Cool 15 minutes.
  6. Meanwhile make glaze by combining glaze ingredients and boiling for 2 minutes.
  7. Pour over warm cake.
