Curried Turkey And Broccoli Recipe
This recipe is great when you don't know what to do with that left-over turkey. Also great with chicken.

Ingredients
  • 3 tbsp. butter
  • 1/4 cup chopped onion
  • 3 tbsp. flour
  • 1/2 tsp. flour
  • 1/2 tsp. salt
  • 1/8 tsp. pepper
  • 2 tsp. curry
  • 1 cup turkey or chicken broth
  • 1 cup light cream
  • 1 tsp. tomato paste
  • 2 cups broccoil spears, blanched
  • 12 slices cooked turkey
  • 1/4 c. sliced almonds

Directions
  1. Melt butter in large non-stick skillet and saute onion until soft. Stir in flour, salt and pepper and curry. Heat 1 minute. Stir in broth and cream. Cook, stirring for 5 minutes. Add tomato paste and cook for 3 minutes.
  2. Pour 1/2 of the sauce into an 8 cup shallow baking dish. Arrange broccoli along sides. Overlap turkey slices in middle. Pour remaining sauce over turkey. Sprinkle with almonds.
  3. Serve with rice and chutney. If you like a hotter curry, use more heat.
