Ingredients
  • 2 cans fava beans, drained
  • 4 ears corn, shucked
  • 2 tbls butter
  • 4 shallots, minced
  • 1 clove garlic, minced
  • 1/2 cup heavy cream
  • Salt and black pepper to taste
  • 1/2 cup parsley, chopped

Directions
  1. Break corn cobs in half
  2. Stand each half on cutting board, flat end down, and slice off kernels with a sharp knife
  3. In a small saucepan, melt 1 tbls. butter
  4. Add shallots and saute until tender
  5. Add garlic and cook for 1 minute
  6. Add cream, increase heat, and bring to a simmer
  7. Turn off heat and season with salt and pepper
  8. In another pan, melt tbls. butter
  9. Add corn and cook for a minute or 2
  10. Add fava beans, cream and shallot mixture, and parsley
  11. Bring to a simmer
  12. Cook until cream has thickened slightly

WOW! and it even has Garlic....Love it and thanks for the post. Easy, quick and elegant, plus I can serve with a glass of Chianti :)


Looks really good! I guess I didn't know you could buy canned fava beans!
