Sweet And Sour Red Cabbage Recipe

Ingredients
  • Can be made vegetarian w/o the bacon)
  • 2 Tbs vegetable oil
  • 1/2 onion, thinly sliced
  • 1/2- 1 apple, peeled, cored, chopped
  • 4 C thinly sliced red cabbage (about 3/4 lb.)
  • 1/4 C good quality apple cider vinegar
  • 1/4 C sugar
  • 1/2 tsp celery seed
  • 1/4 C diced Canadian bacon (or regular)
  • salt and pepper to taste

Directions
  1. Heat oil in heavy large saucepan over med-high heat. Add onion and apple and sauté until golden, about 7 minutes..............................
  2. Add cabbage and vinegar, sugar and celery seed and cook until cabbage is crisp-tender and liquid is reduced to glaze, about 10 minutes. Mix in bacon. Season with salt and pepper.
