Mexican BBQ Chicken Recipe
This recipe has been in my family for many years. You can make it as spicy as you like by increasing the chili powder and cayenne. I serve it with rice and a green salad.

Ingredients
  • Sauce:
  • 1/4 cup catsup
  • 2 Tbs. cider vinegar
  • 2 Tbs. lemon juice
  • 3 Tbs. Wocertershire sauce
  • 1/4 cup water
  • 2 Tbs. melted butter (or you may use 3 Tbs. vegetable oil)
  • 2 tsp. salt
  • 1 tsp. dry mustard
  • 2 tsp. chli powder
  • 1 tsp. paprika
  • 1/4 tsp. red pepper (cayenne)
  • 1 whole chicken, cut up (now I use only the breasts, but bone in, skin on is best for flavor)

Directions
  1. Line a 13 x 9 baking dish with foil. Dip each piece of chicken in the sauce and place in the pan. Pour remaining sauce over chicken. Bake at 500 degrees for 15 minutes; reduce heat to 350 degrees and continue to bake for another 2 hours, or til tender and juices run clear. Uncover the last 1/2 hour of baking. Remove from oven and place chicken on a warm platter, covered with foil. Pour sauce into a pot and thicken with cornstarch and water. Pour sauce over chicken on the platter. Sprinkle with a little chopped cilantro, if desired. Enjoy!
