Mexican BBQ Chicken

- Sauce: shopping list
- 1/4 cup catsup shopping list
- 2 Tbs. cider vinegar shopping list
- 2 Tbs. lemon juice shopping list
- 3 Tbs. Wocertershire sauce shopping list
- 1/4 cup water shopping list
- 2 Tbs. melted butter (or you may use 3 Tbs. vegetable oil) shopping list
- 2 tsp. salt shopping list
- 1 tsp. dry mustard shopping list
- 2 tsp. chli powder shopping list
- 1 tsp. paprika shopping list
- 1/4 tsp. red pepper (cayenne) shopping list
- 1 whole chicken, cut up (now I use only the breasts, but bone in, skin on is best for flavor) shopping list
How to make it
- Line a 13 x 9 baking dish with foil. Dip each piece of chicken in the sauce and place in the pan. Pour remaining sauce over chicken. Bake at 500 degrees for 15 minutes; reduce heat to 350 degrees and continue to bake for another 2 hours, or til tender and juices run clear. Uncover the last 1/2 hour of baking. Remove from oven and place chicken on a warm platter, covered with foil. Pour sauce into a pot and thicken with cornstarch and water. Pour sauce over chicken on the platter. Sprinkle with a little chopped cilantro, if desired. Enjoy!
