Asian Chicken With Peppers And Tomatoes

- 1 lb. skinless, boneless chicken breast shopping list
- 1 T veg. oil shopping list
- 1 t. cornstarch shopping list
- 1 t. salt shopping list
- 1 t. soy sauce shopping list
- dash of pepper shopping list
- 3 small tomatoes shopping list
- 2 medium green peppers shopping list
- 1 medium onion shopping list
- 1/4 C chicken broth shopping list
- 2 T cornstarch shopping list
- 2 T soy sauce shopping list
- 1 t. sugar shopping list
- 3 T veg. oil shopping list
- 1 t. finely chopped gingerroot shopping list
- 1 t. finely chopped garlic shopping list
- 2 T veg. oil shopping list
- 1/2 C chicken broth shopping list
How to make it
- Cut chicken into 1/8 inch slices. It helps if chicken is partially frozen. Toss with 1 tablespoon oil, 1 teaspoon cornstarch, 1 teaspoon salt, 1 teaspoon soy, and white pepper. Cover and refrigerate 30 min.
- Cut tomatoes into 8 wedges and peppers into 1 inch chunks. Cut onion into 3/4 inch pieces. Mix 1/4 cup broth, 2 tablespoons cornstarch, 2 tablespoons soy and sugar.
- Heat wok or skillet over medium heat and add 3 tablespoons oil. Add onion, ginger, garlic and chicken and stir-fry until chicken is cooked through. About 5 minutes. Remove
- Add 2 tablespoons oil. Add peppers and stir-fry 5 minutes over medium heat. Add broth, cornstarch mixture, tomatoes and reserved chicken and cook until thickened and heated through.
- Serve with white rice
