How to make it

  • Cut chicken into 1/8 inch slices. It helps if chicken is partially frozen. Toss with 1 tablespoon oil, 1 teaspoon cornstarch, 1 teaspoon salt, 1 teaspoon soy, and white pepper. Cover and refrigerate 30 min.
  • Cut tomatoes into 8 wedges and peppers into 1 inch chunks. Cut onion into 3/4 inch pieces. Mix 1/4 cup broth, 2 tablespoons cornstarch, 2 tablespoons soy and sugar.
  • Heat wok or skillet over medium heat and add 3 tablespoons oil. Add onion, ginger, garlic and chicken and stir-fry until chicken is cooked through. About 5 minutes. Remove
  • Add 2 tablespoons oil. Add peppers and stir-fry 5 minutes over medium heat. Add broth, cornstarch mixture, tomatoes and reserved chicken and cook until thickened and heated through.
  • Serve with white rice

    Im going to make this, only with yellow peppers and twice the garlic and ginger. Yum!!!
