creamy lemon tart

- 1 cup sugar shopping list
- 1/4 corn flour shopping list
- 1 cup milk shopping list
- 3 egg yolks beaten shopping list
- 1/4 cup of butter shopping list
- 1tbs lemon zest shopping list
- 100mls lemon juice shopping list
- 1 cup of full fat sour cream shopping list
- 1 9inch pastry shell shopping list
How to make it
- bake pastry shell until lightly golden then allow to cool
- in a medium sauce pan combine sugar and corn flour gradually add milk and mix until smooth
- cook over medium heat until thick stirring constantly reduce heat and cook for another 3 minutes remove from heat
- stir half a cup of hot mix to the egg yolks and return all mix back to the pot bring to a gentle boil stirring at all times cook for another 2 minutes mix will be very thick
- remove from heat stir in butter and lemon zest gently stir in lemon juice
- cover and cool completely but not in fridge once cooled fold in sour cream pour into pastry shell and chill in the fridge for two hours before serving
