How to make it

  • bake pastry shell until lightly golden then allow to cool
  • in a medium sauce pan combine sugar and corn flour gradually add milk and mix until smooth
  • cook over medium heat until thick stirring constantly reduce heat and cook for another 3 minutes remove from heat
  • stir half a cup of hot mix to the egg yolks and return all mix back to the pot bring to a gentle boil stirring at all times cook for another 2 minutes mix will be very thick
  • remove from heat stir in butter and lemon zest gently stir in lemon juice
  • cover and cool completely but not in fridge once cooled fold in sour cream pour into pastry shell and chill in the fridge for two hours before serving

    Love a good tart, and this one definitely sounds like my kind - yes, I WILL be licking the bowl clean (that's the benefit of being the cook, isn't it?!)...thank you!
