Greek Pizza Recipe
This pizza is a little time consuming but so worth it. My greek great aunt gave it to me and after 1 bite I just can't stop eating it!!!Hope you enjoy it as much as my family does!!!

Ingredients
  • 1/4 c olive oil
  • 2 c choppped onion
  • 3 cloves garlic pressed
  • 3--10 oz pkgs frozen spinach thawed and squeezed dry
  • 1/2 c chopped fresh basil
  • 2 tbls chopped fresh oregano
  • 1 tsp groun black pepper
  • 2 tbls lemon juice
  • 20 sheets athens fillo dough
  • 1/2 c butter, melted
  • 4 c (1#) grated mozzarella cheese
  • 3 medium tomatoes, sliced thin
  • 2 c crumbled feta cheese
  • 1 c breadcrumbs

Directions
  1. In large skillet, heat oil over medium heat
  2. add onions and garlic
  3. saute for 5 min or until onions are translucent
  4. add spinach and saute untill all evcess moisture has evaporated
  5. add basil, oregano, lemon juice, & pepper
  6. mix well
  7. remove from heat and cool slightly
  8. *prepare Fillo pizza sheets
  9. Use 10 sheets of Fillo dough, brushing each side with melted butter, margarine, or vegetable spray(1/4 c butter)
  10. stack 1 on top each other
  11. repeat buttering and stacking with remaining 10 Fillo dough
  12. Place length of fillo across width of greased 15 x 10 x 1 cookie sheet or baking pan
  13. overlap each set of 10 buttered fillo sheets 5 inches in center
  14. roll overlapping fillo onto itself around edges to form "pizza crust"
  15. brush top layer buter or olive oil
  16. spread spinach mixture on prepared fillo sheets
  17. top spinach with 1/2 mozzarella
  18. dredge tomatoes in breadcrumbs
  19. arrange tomatoes on top of mozzarella
  20. top with remaining mozzarella and feta cheese
  21. bake in preheated 400 degree oven for 25-30 minutes or until golden brown

Oh my gosh. This must be heaven because a pizza made with fillo dough must taste heavenly!!! I can't wait to try it. I'm right there with Chefmeow and you've got my "5" forks as well!
