Ingredients
  • 2 small White tomatoes -seeded & rough chopped
  • 1 large Red tomato -seeded & rough chopped
  • 1 medium Orange tomato -seeded & rough chopped
  • 1 medium Green Zebra tomato -seeded & rough chopped
  • 1 medium Yellow tomato -seeded & rough chopped
  • 1 Small Red onion -chopped into small bits
  • 1-2 Jalapeno peppers -prepped to your liking
  • 1/2 C Frozen sweet corn -thawed
  • 1/2 C Canned black beans -drained & rinsed
  • 1 bunch Fresh Cilantro -fine chopped
  • 2 cloves of Garlic -mashed into a paste
  • Zest of 1 lime
  • Juice of 1/2 -1 Lime
  • salt to taste
  • pepper to taste

Directions
  1. Gently toss all ingredients in a non-reactive bowl (I use a glass bowl). Cover and leave in the fridge for an hour or longer to develop flavors. I have no idea how long this will last in the fridge as it usually only hangs around for 2 days before find the empty bowl in the sink!

I like.


I have to say we share a common interest in the variety of tomatoes too I have grown the Green Zebra tomato they look so cool. With all of these colors and flavors you end up with a spectacular looking and tasting Salsa. I will have fresh corn also.
