Fresh Salsa

- 2 small White tomatoes -seeded & rough chopped shopping list
- 1 large Red tomato -seeded & rough chopped shopping list
- 1 medium orange tomato -seeded & rough chopped shopping list
- 1 medium Green Zebra tomato -seeded & rough chopped shopping list
- 1 medium yellow tomato -seeded & rough chopped shopping list
- 1 Small red onion -chopped into small bits shopping list
- 1-2 jalapeno peppers -prepped to your liking shopping list
- 1/2 C Frozen sweet corn -thawed shopping list
- 1/2 C canned black beans -drained & rinsed shopping list
- 1 bunch Fresh cilantro -fine chopped shopping list
- 2 cloves of garlic -mashed into a paste shopping list
- Zest of 1 lime shopping list
- juice of 1/2 -1 lime shopping list
- salt to taste shopping list
- pepper to taste shopping list
How to make it
- Gently toss all ingredients in a non-reactive bowl (I use a glass bowl). Cover and leave in the fridge for an hour or longer to develop flavors. I have no idea how long this will last in the fridge as it usually only hangs around for 2 days before find the empty bowl in the sink!

I have to say we share a common interest in the variety of tomatoes too I have grown the Green Zebra tomato they look so cool. With all of these colors and flavors you end up with a spectacular looking and tasting Salsa. I will have fresh corn also. ...more
