Caribbean Salsa Chicken Recipe
Of my forays into the world of cooking, this one has gotten the best response yet. :)

Ingredients
  • 1 cup uncooked white rice
  • 2 cups water
  • 1 Tbsp. oil (or butter)
  • 2 chicken breasts
  • ½ to 1 cup salsa
  • ¼ cup mandarin oranges
  • ½ Tbsp. brown sugar
  • 1 Tbsp. lemon juice
  • Cinnamon
  • Nutmeg

Directions
  1. Cook rice as directed.
  2. Heat oil (or butter) in large skillet over medium-high heat until hot. Add chicken; cook and stir for 7 minutes, or until no longer pink.
  3. In a medium-sized bowl, combine salsa, oranges, brown sugar, lemon juice, and spices; mix well.
  4. Add salsa mix to chicken, stirring well. Bring to boil. Reduce heat to low; cover and simmer for 5 to 10 minutes, stirring occasionally.
  5. Serve over hot cooked rice.

I used chicken thighs instead of chicken breasts, and I chopped them into small pieces. I also doubled the rest of the ingredients, and used 1/2 tsp of both cinnamon and nutmeg. It was very tasty!
