Fresh Salsa Recipe
Something fresh to cut through a greasy meat dish, top or side a mexican dish, or to use as a base for bean salads. Great on toasted italian bread as an easy bruschetta or just served with tortilla chips. I prefer my salsas fresh not cooked.

Ingredients
  • 5 ripe tomatoes diced
  • 1 small red onion small dice
  • 1 or more jalapeno peppers diced fine
  • 1/2 tsp ground black pepper
  • 1/2 tsp salt
  • 1/2 tsp dry garlic powder or 2 cloves fresh minced
  • 1/4 cup favourite oil
  • 1/4-1/2 cup cider vinegar (to taste) or lime juice
  • herb options:
  • fresh minced cilantro
  • oregano
  • basil
  • adjust to dish being served

Directions
  1. Mix all together and let marinate for at least an hour to bring out flavours
