Fresh Salsa

Something fresh to cut through a greasy meat dish, top or side a mexican dish, or to use as a base for bean salads. Great on toasted italian bread as an easy bruschetta or just served with tortilla chips. I prefer my salsas fresh not cooked.
Ingredients
- 5 ripe tomatoes diced shopping list
- 1 small red onion small dice shopping list
- 1 or more jalapeno peppers diced fine shopping list
- 1/2 tsp ground black pepper shopping list
- 1/2 tsp salt shopping list
- 1/2 tsp dry garlic powder or 2 cloves fresh minced shopping list
- 1/4 cup favourite oil shopping list
- 1/4-1/2 cup cider vinegar (to taste) or lime juice shopping list
- herb options: shopping list
- fresh minced cilantro 1-2 tsp shopping list
- oregano 1/2 tsp dry shopping list
- basil 1/2 tsp dry or 2 tsp fresh shopping list
- adjust to dish being served shopping list
How to make it
- Mix all together and let marinate for at least an hour to bring out flavours
