Tea Cake Cookies From Russia Recipe
I love this holiday cookie recipe. The recipe is from: The American Diabetes Association Holiday Cookbook, ©1986 by Betty Wedman, MS, RD.

Ingredients
  • 1 cup margarine, softened
  • 1/4 cup confectioners' sugar
  • 1 tsp. vanilla extract
  • Note: I like to use 1/2 tsp. of almond extract
  • 2 cups flour
  • 1/2 cup chopped pecans, toasted
  • Confectioners sugar

Directions
  1. Cream the margarine, sugar and vanilla together until light and fluffy.
  2. Mix in the flour and pecans.
  3. Chill for 2 hours.
  4. Pinch off small pieces of dough and roll into 1-inch balls.
  5. Place on an ungreased baking sheet.
  6. Bake in a 375°F oven until very lightly brown, 10 to 12 minutes.
  7. Cool on a wire rack.
  8. Roll in confectioners' sugar before serving.
  9. Store in an airtight container. Makes 36 Cookies.
  10. Per (one cookie) Serving: 84 Cal; 6 g Total Fat; 6 g Carb;
  11. 00 mg Cholesterol; 50 mg Sodium; 19 mg Potassium. Exchanges: 1/2 Bread/Starch; 1 Fat.
