Vermicelli Vinaigrette

- 4 ounces of vermicelli broken shopping list
- 1/2 cup of salad oil shopping list
- 1/4 cup of red wine vinegar shopping list
- 1 large clove of garlic, minced shopping list
- 1/4 tsp of crushed basil shopping list
- 1 6 ounce jar of marinated arichoke hearts, drained and chopped shopping list
- 1 cup of fresh mushrooms, sliced shopping list
- 6 roma tomatoes, seeded and chopped shopping list
- 1/2 cup of chopped walnuts, toasted shopping list
- 1/3 cup of pepperoncini, sliced shopping list
- 2 tbsp of snipped parsley shopping list
How to make it
- cook pasta according to package directions.
- Drain.
- In a screw-top jar, combine oil, vinegar, garlic, 1/4 tsp of salt, basil and 1/4 tsp of pepper. Shake well.
- Toss about 1/3 cup of dressing with the pasta, cover and chill.
- Toss the remaining dressing with the artichoke hearts and mushrooms; cover and chill.
- To serve, toss together past, artichoke mixture, tomatoes, walnuts, pepperoncini and parsley.
- Serve in a lettuce lined bowl.
