How to make it

  • cook pasta according to package directions.
  • Drain.
  • In a screw-top jar, combine oil, vinegar, garlic, 1/4 tsp of salt, basil and 1/4 tsp of pepper. Shake well.
  • Toss about 1/3 cup of dressing with the pasta, cover and chill.
  • Toss the remaining dressing with the artichoke hearts and mushrooms; cover and chill.
  • To serve, toss together past, artichoke mixture, tomatoes, walnuts, pepperoncini and parsley.
  • Serve in a lettuce lined bowl.
