Vermicelli Vinaigrette Recipe

Ingredients
  • 4 ounces of vermicelli broken
  • 1/2 cup of salad oil
  • 1/4 cup of red wine vinegar
  • 1 large clove of garlic, minced
  • 1/4 tsp of crushed basil
  • 1 6 ounce jar of marinated arichoke hearts, drained and chopped
  • 1 cup of fresh mushrooms, sliced
  • 6 roma tomatoes, seeded and chopped
  • 1/2 cup of chopped walnuts, toasted
  • 1/3 cup of pepperoncini, sliced
  • 2 tbsp of snipped parsley

Directions
  1. cook pasta according to package directions.
  2. Drain.
  3. In a screw-top jar, combine oil, vinegar, garlic, 1/4 tsp of salt, basil and 1/4 tsp of pepper. Shake well.
  4. Toss about 1/3 cup of dressing with the pasta, cover and chill.
  5. Toss the remaining dressing with the artichoke hearts and mushrooms; cover and chill.
  6. To serve, toss together past, artichoke mixture, tomatoes, walnuts, pepperoncini and parsley.
  7. Serve in a lettuce lined bowl.
