hot n spicy salmon soup

- 250g salmon fillet, chopped shopping list
- 1 Tbsp vegetable oil shopping list
- 1 litre fish stock shopping list
- 25g fresh root ginger, peeled and shredded shopping list
- 2 large cloves garlic, crushed shopping list
- 2 large, fresh red chillies (quantity depends on how much you like spicy food!) shopping list
- 1 stem of lemon grass, chopped and bruised to release flavour shopping list
- 3 Tbsp fish sauce (Thai) shopping list
- 1 handful chopped corriander shopping list
- salt and pepper to taste shopping list
How to make it
- Heat the oil in a large pan and add the ginger, garlic, chilli and lemongrass.
- Cook over a low heat until softened
- Add the stock and the fish sauce and lime juice and bring to the boil, then turn down the heat and allow to simmer for about 10 mins. Throw in the spring onions and cook for another 3 mins.
- Add the fish and the corriander and simmer until fish is cooked (2-3 mins, depending on size of pieces).
- Taste and season.
