How to make it

  • Heat the oil in a large pan and add the ginger, garlic, chilli and lemongrass.
  • Cook over a low heat until softened
  • Add the stock and the fish sauce and lime juice and bring to the boil, then turn down the heat and allow to simmer for about 10 mins. Throw in the spring onions and cook for another 3 mins.
  • Add the fish and the corriander and simmer until fish is cooked (2-3 mins, depending on size of pieces).
  • Taste and season.
