How to make it

  • Cook penne until al dente.
  • In a large pan, heat olive oil on medium heat.
  • Add bacon and pancetta, cook until light brown, stirring occasionally.
  • Add onion and cook until soft and slightly golden.
  • Add garlic and saute until soft, (do not brown).
  • Add chopped tomatoes, simmer for 10 minutes on low heat, reserving liquid for later use.
  • Add basil, pepper and parmesan cheese, cook until desired consistency. If it is too thick, add reserved tomato sauce.
  • Over medium heat, add warm pasta to sauce and toss. Heat for 2 minutes.
  • Add seasoning according to taste.
  • Serve with fresh grated parmesan cheese.
