How to make it

  • Apply a tiny bit of olive oil to my pan for the egg, but any non-stick spray will work. Cook egg on medium-light heat. While first side is cooking, grind pepper so that it cooks into the egg.
  • Put honey mustard on one piece of bread, wasabi mayo on the other.
  • Put sliced red onions on the mustard side.
  • Next, pile sliced bell peppers.
  • Put large leaves of spinach on top of the bell peppers and spread a *little* bit of salad dressing on leaves.
  • Turn your egg over and this time grind more pepper AND put some hot sauce on it as it cooks.
  • It'll cook fast, so you may want to turn the heat down.
  • Once your egg is close to done, lay sliced swiss cheese on top, so it melts.
  • Lay cooked egg with melted cheese on top of spinach
  • Lay sliced tomatoes on top of egg
  • I love basil, so I usually use a bunch, but put basil on tomatoes (garlic powder is sometimes a nice touch)
  • Lay sliced feta on top of tomatoes and basil
  • Stick sliced mushrooms to the wasabi side of bread and put that piece of bread on top.
  • Woo hoo!! Slice that thing in half, put a napkin on your lap and you're ready to start your day at noon!
