The Sandwich I Ate This Morning Noon Recipe
One of my favorite bars/restaurants serves a tasty egg sandwich, but I decided to take it a bit further. I'm a late riser and tend to combine breakfast with lunch. This sandwich is nutritious and delicious.

Ingredients
  • 2 slices fresh sourdough (or any fresh bread from your local bakery)
  • fresh mushrooms - portobello or regular "white" kind from any grocery store
  • red onion
  • bell peppers - as many different kinds as possible. They're an excellent source of vitamin C!
  • fresh spinach
  • RIPE tomatoes
  • fresh basil
  • 1 large egg
  • 1 slice swiss cheese
  • fresh feta cheese (slice it)
  • hot sauce
  • wasabi mayo (I bought a jar of it, but I'm sure there's a recipe on here somewhere)
  • honey/dijon mustard
  • creamy italian salad dressing (or whatever you like)
  • fresh ground pepper

Directions
  1. Apply a tiny bit of olive oil to my pan for the egg, but any non-stick spray will work. Cook egg on medium-light heat. While first side is cooking, grind pepper so that it cooks into the egg.
  2. Put honey mustard on one piece of bread, wasabi mayo on the other.
  3. Put sliced red onions on the mustard side.
  4. Next, pile sliced bell peppers.
  5. Put large leaves of spinach on top of the bell peppers and spread a *little* bit of salad dressing on leaves.
  6. Turn your egg over and this time grind more pepper AND put some hot sauce on it as it cooks.
  7. It'll cook fast, so you may want to turn the heat down.
  8. Once your egg is close to done, lay sliced swiss cheese on top, so it melts.
  9. Lay cooked egg with melted cheese on top of spinach
  10. Lay sliced tomatoes on top of egg
  11. I love basil, so I usually use a bunch, but put basil on tomatoes (garlic powder is sometimes a nice touch)
  12. Lay sliced feta on top of tomatoes and basil
  13. Stick sliced mushrooms to the wasabi side of bread and put that piece of bread on top.
  14. Woo hoo!! Slice that thing in half, put a napkin on your lap and you're ready to start your day at noon!
