A quick and easy side dish for those BBQ's we will all be getting into - this is an easy dish and you can switch it up anyway you like look in the fridge if "you" like it and think it goes add it!!!

Ingredients
  • 10 oz Tri color Pasta (rigatoni type)
  • 8 oz Snow Peas (blanched)
  • 1/2 cup onion (diced)
  • 1/4 cup pepper (red bell diced)
  • 1/2 cup celery (diced)
  • 1 cup tomato (grape, cut in half)
  • 1/2 cup carrot chopped
  • 1 packet Herb and Garlic dressing mix (good seasons -mix as directed on package)

Directions
  1. Cook Pasta in well seasoned water - to blanch the pea pods - I just throw them in with the pasta for the last 5 minutes - when you drain the pasta and pea pods - throw 2 cups of ice on top to stop the cooking - leave the colander over top of a pot to drain as the ice melts. (Make sure to remove any unmelted ice cubes after 10 minutes)
  2. Add diced vegetables to the pasta and pea pods - add your dressing and place in the fridge for at least one hour before serving. This is one of those salads that you could add anything to - cheese, mushrooms, artichokes, if you like it you could add it. Enjoy
