Lemon Chicken With Artichokes And Capers Recipe
This is a great, fast and healthy dish when you have very little time to make a wonderful main dish. Serve over brown or white rice. Any leftovers the next day are great, too!

Ingredients
  • 4 skinless, boneless chicken breasts
  • 1/8 cup butter or oil
  • Flour (any kind but I like white whole wheat flour)
  • 1 to 2 cups chicken broth
  • 1/3 cup white wine
  • Juice of 1 to 2 lemons (more if you want it really lemony!)
  • 1 can of artichoke bottoms (go ahead and substitute for hearts if you want
  • 1 jar of capers

Directions
  1. Heat butter or oil in a hot skillet
  2. Cover chicken in flour and place in skillet
  3. As the chicken gets done pour chicken broth over chicken
  4. Add white wine, lemon juice, artichoke bottoms and capers
  5. Simmer on the stove until the sauce thickens. If you like it soupier add more chicken broth
