Lemon Chicken With Artichokes And Capers

- 4 skinless, boneless chicken breasts shopping list
- 1/8 cup butter or oil shopping list
- flour (any kind but I like white whole wheat flour) shopping list
- 1 to 2 cups chicken broth shopping list
- 1/3 cup white wine shopping list
- juice of 1 to 2 lemons (more if you want it really lemony!) shopping list
- 1 can of artichoke bottoms (go ahead and substitute for hearts if you want shopping list
- 1 jar of capers shopping list
How to make it
- Heat butter or oil in a hot skillet
- Cover chicken in flour and place in skillet
- As the chicken gets done pour chicken broth over chicken
- Add white wine, lemon juice, artichoke bottoms and capers
- Simmer on the stove until the sauce thickens. If you like it soupier add more chicken broth
