How to make it

  • Grate carrot and crush walnuts.
  • Combine tofu and bran with processor/mixer stick.
  • Add carrot to processor if smooth batter preferred (I do).
  • Add flour, sugar and soymilk. Mix until well combined.
  • Fold in walnuts.
  • Add cinnamon to taste. I use around 1 1/2 teaspoons.
  • Spoon mixture into lightly oiled mufin cups.
  • Bake at 180C (356F) for 30 minutes or when cooked through. !Do not allow to burn!

    Here the tofu is for texture and soy goodness, soft tofu hasn't got much of a flavour. I have used banana as a substitute quite successfully. You could try something else soft and mild tasting- maybe applesauce?
