Sunbeam Tapioca Recipe
SUNBEAM TAPIOCA This is a recipe I obtained from an Estate sale. I obtained it when I purchased the family collection from the Clover Estate in Arlington, Texas in 1989.

Ingredients
  • 1/2 cup granulated sugar
  • 1/4 cup quick cooking tapioca
  • 1/2 teaspoon salt
  • 1/2 cup pineapple juice
  • 1 cup water
  • 1/2 cup orange juice
  • 1-1/2 tablespoons fresh lemon juice
  • 1/2 cup orange sections diced
  • 1 cup crushed pineapple drained

Directions
  1. In heavy saucepan combine sugar, tapioca, salt, pineapple juice and water.
  2. Bring to boil then boil 5 minutes until thickened then cool.
  3. Stir in remaining ingredients then chill and serve with whipped cream.

Sounds great! I think I'll try this today. My five year old is ALWAYS asking for tapioca pudding, and he hates the store bought kind - it has to be "real". :)
