Ingredients

1/2 cup granulated sugar

1/4 cup quick cooking tapioca

1/2 teaspoon salt

1/2 cup pineapple juice

1 cup water

1/2 cup orange juice

1-1/2 tablespoons fresh lemon juice

1/2 cup orange sections diced

1 cup crushed pineapple drained

Directions

In heavy saucepan combine sugar, tapioca, salt, pineapple juice and water.

Bring to boil then boil 5 minutes until thickened then cool.

Stir in remaining ingredients then chill and serve with whipped cream.

Sounds great! I think I'll try this today. My five year old is ALWAYS asking for tapioca pudding, and he hates the store bought kind - it has to be "real". :)
